Brownie ‘n Berries Pizza

My bridesmaids meeting spread wouldn’t have been complete without a little something sweet. However, since we still had another dinner and celebration to attend that night (one of my bridesmaids’ 25th birthday bash!) I didn’t want to make anything too heavy. I came across this brownies ‘n berries dessert pizza on my dessert board and it looked perfect!

I did make quite a few tweaks to this recipe. First, I didn’t use gluten free brownie mix. I actually used this Duncan Hines dark chocolate brownie mix and HIGHLY recommend it for this recipe. I also eliminated the blueberries and substituted red raspberry preserves for the apple jelly since I didn’t want to buy a whole jar of apple jelly I would probably never use again. Finally, I used Neufchatel cheese instead of heavier cream cheese.

I followed the directions on the box for “fudgy” brownies and I used a 10” springform pan coated with cooking spray to bake the brownie in.

When my brownie was cool I followed the rest of the directions and popped it in the fridge to chill. It took me about ½ – ¾ of a 16 oz. container of strawberries and a whole 6 oz. container of raspberries to cover the “pizza” since I had eliminated the blueberries.

This was a perfect dessert for my bridesmaids meeting – I loved it and my girls raved about it as well. I will definitely be making it again and trying different seasonal fruits! I also wonder how using some of the new Philadelphia snack creams would be instead of plain cream cheese.
